Sweeter Cornbread

Sorry, no picture for this one. This recipe comes from Jamie's mom, Mavis, and is fabulous!

Sweeter Cornbread

1/2 c cornmeal
1 1/2 c flour
2/3 c sugar
1 Tbsp baking powder
1/2 tsp salt
1/3 c oil
3 Tbsp melted butter
2 eggs
1 1/4 c milk

-Preheat the oven to 350, and a grease/spray an 8-inch square metal pan.
-Combine dry ingredients in a large bowl.
-Combine wet ingredients in a medium bowl.
-Pour wet ingredients over dry, and mix just until moistened.
-Pour into the pan, and bake about 35 minutes.

I thought it had buttermilk?

I thought so, too, until I went back and looked at the recipe. I must have been thinking about the pancakes or something else when I said it had buttermilk in it. Amazing to get that kind of texture without buttermilk!

It is definitely the best cornbread recipe I've found. It even tastes great with a lot less sugar - such as 1/3 cup - still has the same texture and it tastes better to me a little less sweet.
