Yogurt Marmalade Cake



This recipe is from one of my favorite websites - The Pioneer Woman. It's very moist, and the yogurt gives it a wonderful texture. This would also be great without the glaze, (which takes away the "marmalade" part of it), served with fresh berries.

Yogurt Marmalade Cake

1 1/2 c flour
1/2 tsp salt
2 tsp baking powder
1 heaping c plain, lowfat yogurt (I use Fage brand) + 1/4 cup
1 c sugar
3 eggs
1 tsp vanilla
zest of 1 lemon
1/2 c vegetable oil
1/2 c orange marmalade

-Preheat the oven to 350, and spray 1 loaf pan.
-In a large bowl, sift together the flour, baking powder, and salt, and set aside.
-In a medium bowl, mix together 1 heaping c yogurt, sugar, eggs, vanilla, lemon zest, and oil until just combined.
-Pour the wet ingredients over the dry, and mix until just combined.
-Pour into the loaf pan and bake for about 45 minutes.
-Cool in the pan for a few minutes, then turn out onto a cooling rack.
-While the cake is cooling, melt the marmalade in a saucepan. Turn off the heat and stir in 1/4 c yogurt.
-Poke holes into the still-slightly-warm cake with a chopstick or skewer, then pour the marmalade mixture over the cake, letting it run down the sides.
