Thanksgiving - and Cranberry Sauce


We had a great Thanksgiving!  It was just the 4 of us.  Jamie took care of the kids all day so that I could get dinner prepped.  It was really relaxing for a Thanksgiving day.  I timed everything well, so it all was ready when it needed to be.  And everything was delicious!  I made my own cranberry sauce, and I made a great pumpkin pie using a recipe from here:  savory sweet life.

Turkey, mashed potatoes, gravy, stuffing, roasted brussel sprouts, deviled eggs, cranberry sauce, and rolls.

Homemade cranberry sauce






 The cranberry sauce was made using what I had on hand, and it was delicious!  (It made a bunch, so after having leftovers for a few days, I made muffins out of the rest - and they were awesome.  I used my standard muffin recipe, but instead of making the fruit jam for it, I used cranberry sauce.  I also added the zest from 1 orange to the dry ingredients.)  Here's the recipe for the cranberry sauce - all measurements are approximations.

Cranberry Sauce

1 cup water
1 cup sugar
16 oz fresh cranberries
1/2 a large apple, peeled & diced (I used a Fuji)
1 orange - use the zest from half of it, and the juice from the whole thing
1 lemon - use the juice from half of it
a splash of brandy
1 tsp freshly grated nutmeg
2/3 tsp cinnamon
a pinch of kosher salt

-Stir the sugar and water together in a saucepan.  Bring to a boil, then add the cranberries.  Return to a boil, and then lower to simmer.
-Add the rest of the ingredients, and simmer 10-15 minutes, stirring occasionally.
