Cauliflower Parmesan
It may not look like much, but this is yummy! A great alternative to the typical cauliflower-and-cheese dish.
Cauliflower Parmesan
1 head of cauliflower, cut into florets
1 Tbsp olive oil
2 Tbsp flour
1/2 cup skim milk (I was a little short and made up the rest with light sour cream. YUM!)
1/3 cup water
1/2 tsp chicken-flavor bouillon
1/2 cup grated Parmesan
1/4 cup bread crumbs (I used panko)
1/4 tsp paprika
-In a medium saucepan, combine the cauliflower florets with 1/4 cup water. Bring to a boil, then reduce the heat and simmer, covered, 5-6 minuted, until the cauliflower is crisp-tender. Drain, pat dry with paper towels, and then pour into an ungreased 1-qt casserole dish.
-Preheat the broiler.
-In the same saucepan (yay for minimal cleanup!), heat the oil over medium heat. Whisk in the flour, and cook and stir 1 minute. Add the water and bouillon and mix well. Cook 3 minutes, stirring constantly, until the sauce boils and thickens. Stir in the cheese and cook until melted.
-Pour the sauce over the cauliflower, and sprinkle with the bread crumbs and paprika.
-Broil for 2 minutes, until the top is golden brown.
