Rhubarb Pie
This is Jamie's favorite - his mom's recipe.
Rhubarb Pie
filling:
1 egg, beaten
1 cup sugar
3 cups chopped rhubarb
1 Tbsp flour
1 tsp vanilla
topping:
3/4 cup flour
1/3 cup butter
1/2 cup brown sugar
-Preheat the oven to 450, and arrange an unbaked pie crust in a pie plate.
-Combine the filling ingredients, and pour into the unbaked crust.
-Combine the topping ingredients; mix until crumbly, then sprinkle over the filling.
-Bake at 450 for 10 minutes, then reduce the heat to 350 and bake for an additional 40 minutes.

rhubarb pie sounds perfect for this weather and i haven't had any in SO long! gonna have to try this recipe soon...thanks trish!
