Roasted Carrots
These can serve as a healthy alternative to french fries when you're having burgers or sandwiches.
Roasted Carrots
(prepared the way we prepare all roasted veggies)
carrots (I used baby carrots - faster than chopping full-sized ones)
olive oil
kosher salt
pepper
-Preheat the oven to 400-425ish.
-Spread the carrots out on a foil-lined baking sheet.
-Drizzle carrots with olive oil and sprinkle with salt and pepper.
-Roast 10 minutes; stir; roast an additional 10-12 minutes.
-Enjoy!

definitely gonna have to try that soon!
I'm going to try that too. Sounds good. I like roasted fresh green beans and roasted broccoli so I'd probably like the carrots.
