Fish Tacos
This is a recipe from Mom & Dad. It's delicious and it comes together really quickly. Keep some frozen tilapia on hand; you can make the sauce and slice the avocado while it's thawing. You'll want to assemble the tacos using corn tortillas (warmed), avocado slices, shredded cabbage (buy a pre-shredded "cole slaw kit" to save time), and chopped cilantro.
Fish Tacos
2 tilapia fillets
1 Tbsp olive oil
1 Tbsp butter
1/4 cup flour
1 Tbsp creole seasoning
-Mix the creole seasoning into the flour.
-Melt the olive oil and butter together over medium heat.
-Dredge the tilapia in the seasoned mixture, and pan-fry 2-3 minutes per side until the edges are crisp.
Sauce:
1/4 cup plain yogurt
1/4 cup mayo (light is fine)
2 tsp lime juice (about 1 lime)
1/2 jalapeno pepper, seeded and minced
1 tsp capers, minced
1/8 tsp dried oregano
1/8 tsp cumin
1/8 tsp dill
1/8 tsp cayenne
Mix together and serve over the tilapia.
